Recipes from Roys Seasonings

Chicken Francese 6/2013

Add 2 tblsp olive oil in a medium pan over high heat. Add strips of chicken breast seasoned with Lemonicious or Natural seasoning and turn until browned on both sides. Add 1/2 stick of butter. After melting add 1/4 cup white wine, 1/4 - 1/3 cup lemon juice to taste, 2 tblsp minced garlic, 1/4 cup white wine, 4 chopped small green onions, 1/4 cup capers, 1 cup chopped mushrooms, and sauté for 5 -6 min. During this time steam 2 cups of broccoli & rice separately. Remove the chicken and add 1/4 cup grated Parmesan cheese & 1/4 cup flat parsley and stir until it becomes the consistency of a sauce. Mound the rice on a large serving dish, arrange the chicken strips to cover the rice, pour the sauce over the chicken & rice, garnish the sides with the broccoli, and the top with lime or lemon slices.




Flat Bread Pizza  5/2013

Pre-heat oven to 350 degrees F. Pre-bake flatbread on a baking sheet 4-5 min. Remove from oven and place sauce or olive oil, cheese, Roys Seasonings, Poco Caliente, mushrooms, squash, olives, pre-cooked chicken, & spinach. Place back into the oven for about 5 to 8 minutes.

Ceviche 4/2013

Season 1 lb of small shrimp with Roys Seasonings, Poco Picante. Chop into small pieces, onion, tomato, avacado, bell pepper (red or green), and cilantro, then mix thoroughly with the shrimp. Squeeze two small limes or 1 lge lemon and mix the juice w/o seeds into shrimp-vege bowl. Cover and put into refrigerator for about 4 hrs or even overnight to allow the citrus juice to ferment the shrimp & veges. Serve while still cold with chips or a spoon.
Baked Spring Rolls 3/2013


Baking the spring rolls avoids the greasy spring rolls you get when you fry them. Fry a mix of shredded cabbage and carrots in a separate pan with 1 - 2 tablespoons of olive oil or vegetable oil (sesame oil if you have it) and let set to keep warm. In a wok make your dipping sauce. Mix 2 tbsp of soy sauce, 2 tblsp wine vinegar, 1 tbsp minced ginger, 1 tbsp minced garlic, 1/2 cup of chicken broth, 1 tbsp honey (pancake syrup works as well), boil the mix then simmer down to about half volume. Remove the sauce from the wok and place in a ceramic cup or bowl to keep warm. Preheat the oven to 400 F. Now add 1/2 lb of pork, chicken, or shrimp to the wok, sprinkle on Fuego, Roys Seasonings, and fry to until almost done and add the cabbage carrot mix stirring until the meat is completely cooked. Now strain the wok contents and place into a bowl. Make an egg white wash by combining 1 egg white with 1 tbsp of water. Using a large cutting board or wax paper lay out a large square wrap in a diamond configuration, fill the center of the wrap with a soup spoon of the meat mix, fold over the top of it with the corner closest to you as shown in the photo. Bring in both side corners. With a cooking brush apply the egg wash to the inside of the top corner and roll the body over it to complete the roll. (you could also just pull the top corner towards the roll) Now cover the roll completely with the egg wash. I believe this makes it crispier. This should make about 6 -8 spring rolls depending on how much filling you use. Place the rolls on a grilling pan and insert into the oven just above center for 10 minutes or until brown. Remove and turn over the rolls replace in oven for about 3 to 5 min until brown. Remove rolls from oven, pour dipping sauce into small dipping bowls for each guest, serve spring rolls and enjoy.





Mediterranean Pizza

 Using pre-made pizza dough. Pre-heat oven to 375 deg F. Brush or spray olive oil on both sides of pizza dough. Place dough on pizza stone or pan. Brush or smear tomato sauce of choice on one side of dough. Sprinkle Roys Seasonings Poco Caliente on the tomato sauce. Add olives, onions, mushrooms, shrimp, and shredded cheese. Place pizza into oven for 10 -15 min. Check pizza after 10 min to see if crust is browned & cheese has melted. Continue heat if not. Remove from oven and cut into slices with pizza cutter. Serve right away before it cools.





EXOTIC FLAVORED FRENCH TOAST

Makes 6-7 pieces. In a medium bowl or flat pan add 3 large
eggs, 1 cup of milk, & 1 tblspn of ISLAND JERK seasoning. Beat the egg mixture until yolks are broken and the mix is homogeneous. If not all ready in a flat receptacle place the mix in one. Add tblspn of cooking vegetable oil to a flat griddle pan. Turn up the heat to medium. Meanwhile place one or two pieces
of bread depending upon size of the mix pan, allow to soak for about 8 - 10 sec on each side before placing the soaked bread on the griddle pan. If the griddle is at the correct heat it should only take about 10 sec of heat per side.
Remove, add butter, syrup, (optional powder sugar) to taste.



BLACKENED FISH VEGE SPINACH FETTUCCINE

In a medium grill pan add 3 tblspn vegetable oil, grill 2 medium well seasoned fish filets. Chop 2 med. tomatoes, 1 cup of mushrooms, 1 large orange or yellow pepper, season also and stir fry in a med pan with olive oil. Boil 1/2 bag of spinach fettuccine noodles. Put pasta in a serving dish and mix with 3 tblsp of olive oil. Break up the fish filets and mix it with the vegetables. Place the fish/vegetable mix on the pasta. Garnish with lime or lemon wedges to be squeezed over the servings.

CHICKEN PASTA PICCATA
piccata (means 'beaten' in Italian)

In a medium grill pan add 3 tblspn vegetable oil, grill 4
medium
seasoned chicken breasts. Boil 1/2 box of wheat angel hair pasta,
drain and set aside. In a small sauce pan saute 4 cloves of chopped garlic with 1/4 cube of butter until cloves are transparent, add 1 tblspn of
olive oil and 3 tblspn of flour to the sauce pan mixing slowly on simmer until it becomes a paste and turns golden brown, now slowly add 1 cup of chicken broth
while stirring and 1-2 tblsp of lemon juice until it thickens. Turn off heat and add 2-3 tblsp of capers with juice and stir into mix. Put pasta in a serving dish, pour 1/2 of the sauce on the pasta, place the grilled chicken on top of
the pasta and pour the rest of the sauce on top of the chicken. Optional add grilled asparagus or mushrooms.
* This is the second recipe I tried before finding one that worked.

CHICKEN TORTILLA PIE

In a medium pan add 3 tblspn vegetable oil, 2 chopped medium
seasoned chicken breasts or 1/2 lb ground meat of choice, 2 cloves chopped garlic, 1/2 chopped onion, when meat is almost brown on all sides, add 1 medium chopped red pepper, 1 cup of sliced mushrooms, 1 can of sliced olives or slice them your self, Stir well and put on simmer for about 5 min. Pre-heat oven to 400 deg F. Place one large tortilla on a flat baking pan or pizza stone. Use a large serving spoon to transfer meat and veges to the tortilla and spread around evenly. Sprinkle generously a shredded blend of cheeses over the spread. Apply another large tortilla on top. Place pan or pizza stone in the upper 2/3 of oven for 3 - 5 minutes until the top tortilla just starts to brown. Remove from oven and slice like a pizza.

Chicken Fettucini Fuego

In a large deep pan add 3 tblspn vegetable oil, 4 chopped

skinless & boneless chicken breasts, 3 cloves chopped garlic, 1/2 chopped
onion, turn on medium heat and apply Fuego liberally until meat is covered
while browning, when meat is almost brown on all sides, add 1 cup of thickly sliced mushrooms, 1 medium chopped red pepper, and 1 cup of green beans trimmed and medium chopped. Stir well and put on simmer. In a separate pot boil water with a couple of squirts of olive oil and a few shakes of salt. Once water has begun to boil add the fettucini pasta, about half a package is enough for 3-4 people, stir occasionally, until pasta has just become soft clear through both sides. Strain the pasta, add it to the simmering sauce, stir well until pasta is covered, turn off heat then serve.



Island Pasta

In a large deep pan add 3 tblspn vegetable oil, 1 lb of ground meat, 3 cloves chopped garlic, 1/2 chopped onion, turn
on medium heat
and apply Island Jerk liberally until meat is covered while browning, when meat is almost brown on all sides, add 1 cup of sliced mushrooms, 3 chopped medium tomatoes, and a can of small to medium pitted olives, and a can of tomatoe sauce. Stir well and put on simmer.
In a separate pot boil water with a couple of squirts of olive oil and a few shakes of salt. Once water has begun to boil add favorite pasta, about half a package is enough
for 3-4 people, stir occasionally, until pasta has just become soft clear through both sides no longer. Strain the pasta, add it to the simmering sauce, stir well until pasta is covered, turn off heat then serve.



White Ruffey w/ sesame seeds

Melt the butter and baste on both sides of the white ruffy fish, sprinkle on Lemonicious seasoning on both sides, cover with aluminum foil, broil in oven for 4 minutes about 5 inches from the heat, turn over and cokk for 4 more minutes, open the foil, baste again with the butter, sprinkle on the sesame seeds and broil each side 2 min or until the sesame seeds are a golden brown.

Pre-heat oven to 350 deg. Spray a small baking pan with oil, beat egg and cover chicken with egg, in a separate pan mix flour, bread crumbs, and Roys Seasonings, roll chicken in flour mix until thoroughly coated, , bake in oven uncovered for about 60 minutes then check the top of the chicken for dry spots, treat dry spots with oil spray, continue cooking for another 30 min until golden brown.

In a large mixing bowl, mix flour, corn starch, & Roys Seasonings together, and blend well. Wash and drain
chicken and pat dry. Coat chicken in flour mixture; refrigerate chicken wings for 60 to 90 minutes. Refrigeration makes the batter stick better to the chicken. 
When ready to deep fry chicken wings, heat oil to 350 degrees. Place chicken pieces in hot oil, but do not crowd. Fry chicken wings & strips until golden brown on both sides, about 5 min each side. Remove from oil and drain on paper towels. When all wings have been fried, place in a large bowl. Add hot vinegar mixture and mix completely. Use a fork or tongs to place chicken pieces on a serving platter. Serve immediately so it's still hot a with lots of paper towels, it's messy but so good.





Orzco Pasta Salad

Orzco pasta looks like large rice but is actually a very small pasta. Cut the
vegetables in small pieces, and the tomatoes length wise ahead of time, combine in a bowl, add vinegar and Lemonicious seasoning then mix well. Boil the orzco pasta according to the directions, drain, add the pasta to the vegetables, mix together with the olive oil. For added zest sprinkle in lemon juice. Sprinkle the top with Feta cheese.





Steak w/ Gorgonzola Butter

Sprinkle your
favorite Roys Seasonings on both sides of a steak, allow to marinate at least 1
hour at room temperature. Mix Gorgonzola cheese, butter, and 1/4 cup of Woodsman or Classic seasoning in a blender. Bake or microwave russet potatoes. Steam a equal mix of kale & chard sprinkled with Lemonicious seasoning & olive oil mix.
Serve all on a plate placing a large spoonful of the Gorgonzola mix on top of the steak & potato immediately while hot. Yum!






Baby Back Ribs

Pre-heat
oven to 300 - 325 deg F, Rinse meat, pat dry, cover meat liberally on
both sides w/
seasoning, cover w/ aluminum, roast for 2 hrs, remove foil and continue roasting for approx 30 min for the exterior browning. Optional have a separate side of bbq sauce for dipping.





Chicken Satay w/ Asparagus

Season chicken completely with Woodsman,
stir fry
chicken till almost brown and add green beans then add to one side the
asparagus or in separate pan and continue turning until chicken is completely cooked.
For the Satay sauce, dry roast the fennel seeds on a cookie sheet with the oven door open until the roasted fragrance is apparent then grind the seeds into a powder. In a small sauce pan combine the fennel, curry, brown sugar, and oil and stir together until it becomes a dark wet paste, then begin heating the pan on low heat and slowly mix in the peanut butter until a uniform consistency is reached.
Use the Satay sauce as a dip. Delicious - one of our favorite.







Kabobs

Cut meat and veges into 3/4 in to 1 in cubes. Put on skewer.
Sprinkle on seasoning. Cook in oven for about 20 min at 375 deg F, or barbecue for about 5 to 8 min on each side. Serve
alone or with rice.



Pork Butt w/ bone in

cut small holes in the meat and fill with peeled, thick sliced garlic, then cover
the roast entirely with Woodsman seasoning
Add 1/2 inch of water to bottom of pan. Pre heat oven to 425
deg f, place in oven uncovered for 1 hour, replace water, cover w/ aluminum and roast at 275 deg for 7 hrs. Replace water every couple of hours or as needed.
Take out of oven and let relax 15 min before serving





Steak

If frozen allow to thaw, rinse with water, remove excess moisture with paper towel, allow steaks come to room temperature, now apply Roys Seasonings
liberally on both sides. Let meat sit with seasoning for 1 hour allowing the natural tenderizer to work. Coat bottom of steak pan or grill lightly with oil & turn up heat to med to high heat. Cook till one side is brown then turn over and brown to taste. If steaks are to be rare the meat will compress easily, for medium to well done the meat does not compress when pressed with a spatula. After removing the steak from the heat, cover the meat with aluminum foil to keep the steak warm while it is relaxing.
Relaxing the meat for 10 to 15 min keeps the meat tender by allowing the meat fibers to reabsorb the internal juices.
